Description

Miopasso Grillo Appassimento is a delightful white wine discovery from Sicily. It exhibits notes of dried fruits and nuts on the nose, with hints of orange and grapefruit. The palate is soft and well-rounded, with touches of honey on the long finish. The wine's colour is straw yellow with flecks of gold.
The Grillo grapes used in making this wine are grown in the top white grape-producing area around Marsala. They are handpicked several times, some when they have reached the peak of maturity and others after being left on the vines until they have lost the required amount of weight through drying in the Sicilian sun, known as the appassimento method.
After undergoing a gentle de-stemming, the wine is left to decant for approximately 24 hours, followed by fermentation at about 17-18°C for 12-15 days. The wine is then rested on fine lees for about 3-4 months before bottling.
